This is the spinach dish to turn all spinach haters into spinach lovers. Creamy Spinach with Mushrooms is the first “melt-in-your-mouth” experience I’ve had with a savory dish, because the spinach soaks up the cream so beautifully and with each bite I can’t wait to prepare my fork for the next round. The mushrooms give the dish a new texture, something tangible to bite into alongside the wilted spinach, which I think is what makes it a crowd pleaser. This dish originated from a night when I was having some of my best girlfriends over for dinner and I wanted to do something special with my side of sautéed spinach. In the past I would sautée it in a little butter and olive oil, then add salt and pepper. However, with the addition of mushrooms, finely diced onion, a little cream, and a dash of nutmeg, this side dish becomes something to be devoured. What to pair with this side dish? Anything, really. I’ve paired it with steak and lobster for a special occasion, and I’ve paired it with Jamie’s Chicken. Because it requires a couple more steps that a simple one-ingredient sautéed vegetable, keeping the main dish easy will ensure a stress-free dinner. But you could also take a few steps in advance to make it even easier.

Prep Ahead: Chop the onions and mushrooms the day before and store in airtight containers. Wash the spinach the day before and store in a bag with a paper towel to absorb any extra moisture. Then on the day-of, everything can just be tossed into the pan when ready.

Instructions
  1. In a large saute pan, heat butter over medium heat with the olive oil.
  2. Once butter has melted and is bubbling, add the onion and then the mushrooms (roughly chopped).
  3. Add a dash of salt and pepper, and stir occasionally about 3 minutes or until onions are translucent. Add a little more olive oil at this point if mixture looks dry or is sticking to the pan (this will vary based on the pan used).
  4. Begin adding the spinach a few handfuls at a time, letting the previous handful cook down enough to add more handfuls. Give it a stir to help the spinach wilt faster.
  5. Once all of the spinach has just wilted, add a dash more of pepper, and a pinch of grated nutmeg (a little less than 1/8 tsp). Stir to combine.
  6. Add the cream and stir. Let cook for about a minute more to incorporate the cream, stirring occasionally. If adding cheese, sprinkle on top and serve immediately or cover until ready to serve and reheat.
