I cannot believe that August has already arrived. While I am eagerly anticipating fall (because the baby will arrive!), I am still holding onto the light, fresh recipes of this season and enjoying our summer produce. As we are nearing the due date for baby, I am trying to continue eating as healthy as possible. I’m adding more fruits and vegetables into each of my meals wherever I can.

My newest pregnancy food obsession is homemade popsicles. It satisfies my ice cream craving but I get to make sure all of the ingredients are the quality I want. I’ve been using these fun popsicle molds to make orange basil pops (fresh squeezed orange juice with basil chopped very finely), and they are divine!

While the popsicles make a great dessert or snack in this summertime heat, a tomato tart makes a perfect summertime lunch or dinner. Serve it with a salad and some fruit. It feels simple, rustic, and fresh to me. We add basil to our tart, so it becomes almost a caprese tart in a way. If you want to use it in a bigger dinner, it would make a perfect first course.

Instructions
  1. Preheat oven to 400 degrees.
  2. Place piecrust in pie pan and bake for 8 minutes.
  3. Sprinkle cheese in pastry shell and top with basil. Sprinkle garlic over cheese and basil.
  4. Arrange tomato slices on top, drizzle with olive oil, sprinkle with salt and pepper.
  5. Put back in the oven to bake for 25-30 minutes.
